If you have celiac disease or wheat/gluten sensitivity, going on a gluten-free diet may lower or even eliminate your thyroid antibodies and cause an autoimmune thyroid disease remission. If you have not been diagnosed with celiac disease, but are suspicious for it based on symptoms and/or a family history, be sure to get it checked out by your doctor. 
In the past, doctors weren't able to detect hypothyroidism until symptoms were fairly advanced. But by using the sensitive TSH test, doctors are able to diagnose thyroid disorders much earlier — often before you experience symptoms. Because the TSH test is the best screening test, your doctor will likely check TSH first and follow with a thyroid hormone test if needed. TSH tests also play an important role in managing hypothyroidism. They help your doctor determine the right dosage of medication, both initially and over time.

The thyroid gland, situated just below the Adam’s apple on the low part of the neck, produces the thyroid hormones in the body. The thyroid gland is shaped like a butterfly and wraps itself around the trachea with two lobes attached to a central isthmus. When you eat foods containing iodine such as salt and seafood, this thyroid gland uses the idodine to produce the thyroid hormones. There are two important types of thyroid hormones produced which would be T4 or Thyrozine and T3 or Triiodothyronine (T3). These account for most of the thyroid hormones present in the bloodstream. I think most people with hypothyroidism would agree that their condition is not due to a deficiency of synthetic thyroid hormone. Even though this is obviously true, most endocrinologists tell just about all of their patients with hypothyroidism and Hashimoto’s Thyroiditis to take synthetic thyroid hormone medication for the rest of their life without trying to find out why the person developed a hypothyroid condition to begin with. Other causes of hypothyroidism include surgical removal of the thyroid (usually for cancer), radiation therapy of the head and neck, or complications of medical therapies for hyperthyroidism. Heart problems - Hypothyroidism may be associated with increased risk of heart disease, mainly because high levels of low-density lipoprotein cholesterol (“bad” cholesterol) may occur in patients that have an underactive thyroid. Even mild or early stage hypothyroidism that does not present symptoms can cause an increase in total cholesterol levels and diminish the heart’s ability to pump blood.


“Some evidence suggests that soy foods, by inhibiting absorption, may increase the dose of thyroid hormone required by hypothyroid patients. However, hypothyroid adults need not avoid soy foods. In addition, there remains a theoretical concern based on in vitro and animal data that in individuals with compromised thyroid function and/or whose iodine intake is marginal, soy foods may increase risk of developing clinical hypothyroidism. Therefore, it is important for soy food consumers to make sure their intake of iodine is adequate.” [Messina]

Similar to processed foods, fast food chains also aren't required to use iodized salt in their foods. And even when they do, it might not boost the iodine content all that much, according to one 2010 commentary in the journal Endocrine Practice, which tested products from two fast food restaurants in the Boston area. The study authors concluded that drive-thru fare might be pretty low in iodine.
Thank you for the information. I’ve been on the meds four years and I keep on getting fat and sluggish plus all the other symptoms. I’m exhausted. I also want to share that the medication and a good diet don’t cure this disease in everybody. A reliable herbalist told me it’s possible to replace the medication for a natural iodine source; to slowly lower the synthetic medication as I start ingesting algae supplements. It’s very dangerous to stop talking the synthetic med all at once. So the switch has to be very slow into the algae. I’m gonna order the algae and start giving it a chance.

To offer some perspective: up to 95% of the thyroid hypothyroidism in the US is caused not by an iodine deficiency, but occurs as the result of an autoimmune disease so avoiding cruciferous vegetables will do little to fix your underactive thyroid, and may deprive you of  valuable healthy benefits such as dietary fiber, and anti-inflammatory, cancer-fighting antioxidants.5
An unhealthy gut environment can contribute to nutrient deficiencies and raise autoimmune activity in the body. Food sensitivities or allergies, including those to gluten and dairy, can trigger gut inflammation. Other causes of a damaged gut are high stress levels, toxin overload from diet and the environment and bacterial imbalances. When leaky gut occurs, small particles that are normally trapped inside the gut start to leak out into the bloodstream through tiny openings in the gut lining, which creates an autoimmune cascade and a series of negative symptoms.
You may find that changing your diet will help. One suggestion is to reduce or eliminate sugar, limit fruit, dairy, and grains, and get your carbohydrates mainly from vegetables. Round out your diet with lean proteins and healthy fats. In addition, eating two to three meals a day, no snacks, and avoiding food after 8 p.m. seems to help balance hunger hormones and blood sugar—and promote fat burning.
